Healthier version of Pasta roni angel hair parmesan cheese box dinner?
I looove the angel hair parmesan cheese pasta roni box dinner. But there is so much sodium. I was thinking of using whole wheat angel hair pasta. But I want to get the same mix of herbs and ingrediants. Any suggestions? What is "cream" that a couple of people have mentioned.

- Don't know if this is the same.....probably better :) Parmesan Cheese Sauce 1/2 cup butter 1/2 cup chopped green onions 1/4 cup chopped fresh parsley 2 tablespoons all-purpose flour 2 cups cream 4 ounces shredded Swiss cheese 4 ounces fresh grated Parmesan cheese Melt butter in a heavy saucepan over medium heat. Stir in green onion and parsley; cook until the green onion has softened, about 3 minutes. Stir in flour and cook for 3 minutes more, stirring constantly. Pour in the cream, increase heat to medium-high and bring to a simmer. Once the cream comes to a simmer, reduce heat to medium-low and whisk in the shredded Swiss and Parmesan cheeses. Slowly simmer, uncovered, until the sauce has thickened, about 3 minutes. Season to taste with salt and pepper before serving.
- I like whole wheat pasta with a store bought cheese alfredo sauce, you can add veggies, to make it healthier, onion, broccoli, mushrooms, tomaotes and fresh basil go great with the sauce.
- Check the back of the box and see what ingredients they use. Butter, Parmesan cheese, cream or milk, flat leaf parsley and a little oregano, salt and pepper... I would imagine could get you pretty close to the recipe.
- Put your own herbs in. You can add some bullion they have vegetable bullion as well as chicken and beef, even fish. Just watch the sodium in it. But you will be able to add as much or as little as you want. Saute your pasta just a bit in olive oil or butter but I wouldn't recommend margarine because of the hydrogenated oil in it. After you have browned your pasta add the rice, again any type or types you like. Even china black a wonderful nutty flavored rice. Hard to find but it tastes great and cooks just about like long grain white rice. Add your water and bullion, if it is a cube smash it up so it isn't in just one part of your dish. Then add the spices you like, sodium free, then you can add as much as you want. You can also add fresh herbs like onion, garlic, scallions, sage rosemary, etc. Add dry spices with the water, and the, fresh later on. You may not make it perfect the first time but keep trying, and you will find the cost/ serving will go down. This will take just a little more time but you are in control, and your imagination can carry you much farther than a box in the cupboard. Good luck.
