Is parmesan cheese a good substitute for gruyere?
i live in a small town and i don't have a way to get to a larger store so will parmesan work?

- I think it will be fine! they say gruyere tastes like parmesan and swiss had a baby....so if you have swiss just mix em!

- Yes, it's very close in taste and will amalgamate into sauces easier too.
- Depends on what you are making. If you are making onion soup, fondu, or quiche, use swiss, fontina or emmenthaler. I do buy an aged gruyere that is very hard and has similar characteristics of a good parm, so there are some instances where it would be appropriate too.
