Is there a way to make fettucine alfredo without parmesan cheese?
I had it in a restaraunt once, and I liked it, and then I went home and tried to make it, and I used parmesan cheese and I hated it- so is there a recipe without it?

- just don't add the cheese. it will taste great.
- Alfredo is just cream and butter thickened with parmesan cheese. I suppose you could use another hard cheese (grana) to try to get the same thing. But, I don't understand how you can like alfredo and not like parmesan. It what gives alfredo all its flavor.

- Maybe you used too much Parmesan cheese? It can be overpowering.. Try using less of the cheese. I bet you'll love it!

- Try this one: Fettuccine Alfredo Vegetarian Recipe Ingredients: 1 tablespoon oil 8 mushrooms, chopped 5 cloves garlic, minced 1/2 cup coconut milk Vegan soy parmesan (optional) Scant 1/4 teaspoon nutmeg 1/2 - 1 teaspoon freshly ground black pepper Salt to taste Directions: Saute the mushrooms and the garlic in a pan over medium-low heat, until it looks creamy. Separately bring the coconut milk to a boil over the lowest heat possible, and as soon as it starts boiling, add the parmesan (if using), nutmeg, and pepper, (lemon, if using - see note below) and remove from heat. Mix all together. Add the coconut sauce to the mushrooms/garlic and simmer on low heat until the sauce reduces. Make sure to stir it constantly or mixture will burn. Stir until it comes to a consistency that looks like alfredo sauce, and serve immediately over fettuccine noodles. Note: You can also add some lemon juice to the sauce, freshly squeezed is best, or garnish with lemon wedges

- It depends on what kind of Alfredo sauce you had: was it the original one made of butter thickened with Parmigiano cheese? In this case you don't have a choice, unless you decide to use a milder cheese that you like better. Was it some kind of creamy white sauce with chicken or veggies in it? Here you can create as you like, with or without cheese: just add some cooking heavy cream to any sauteed mix of diced veggies like shallot or green onion, carrot, celery, green peas. You can also use sliced mushrooms, baby spinach, broccoli florettes, zucchine, etc. and bites of chicken breast or shrimps. Get creative. Use some olive oil to sautee the veggies which is healthy and add flavor, add the heavy cream at the end to bind together, use salt and pepper to season to taste, then toss in it your favorite pasta cooked "al dente" (which means just not overcooked), mix well and serve right away.
