Salad Recipe that includes melting parmesan cheese and laying over a cup for shaping?

K...my mom had asked me to find a recipe that she saw (she doesn't remember where) that included pretty greens and melting parmesan cheese in a pan and laying it over a cup to shape it and put it with the salad. Does anyone have a recipe like this that you'd like to share with me...pretty please?!? Thanks!

Here's a recipe from Food and Wine's website that includes using a Parmesan cup http://www.foodandwine.com/recipes/eggplant-salad-in-parmesan-cups You can substitute spring greens for the salad, perhaps with a half a pear-cherry tomato on top? But I would dress these greens very sparingly - not sure if the dressing would make the cup soggy!

Parmesan Shells: vegetable oil spray 1-1/3 cups Parmesan cheese, coarsely grated 1 cup Parmesan cheese, finely grated Prepare Parmesan shell by spraying an 8-inch nonstick sauté pan with vegetable oil spray. Heat pan over medium heat. For each shell, add 1/3 cup coarsely grated Parmesan to the bottom of the sauté pan, distributing the cheese evenly across the pan. Allow the cheese to bubble for about 30 seconds before adding an additional 1/4 cup of finely grated Parmesan. When the cheese starts to turn golden brown, remove from the pan and place over a mold or a small stainless steel bowl. Allow to cool. When I saw this recipe, it was served as a bowl with fresh baby lettuce inside. Very pretty
  3. I do believe I saw this on Dlorentis' site on foodnetwork.com this is a fairly common fare for Italian salads. The melted cheese is good on soups also and you can shape it any way you want.
  4. First things first, get the real parmesan reggiano, don't get the crap in the shaker can. The stuff in the shaker can work work and tastes awful. Take a sheet tray, line it with parchment paper and grate your parmesan on the tray. Grate it in to a disc of the size you are looking for. Make sure it is even and there are no holes. Bake it in a 350 oven for 5-10 minutes, or until golden brown. Immediatley pull it from the oven while it is hot and place it in a bowl to cool and to get its shape. As it cools, it will harden.
