Does anybody know the recipe for an Italian grated noodle made with semolina, parmesan cheese, parley and egg?
My aunt used to make this every Christmas, and now that she's getting on in years, she can't remember how to make it and she's getting really frustrated. She's never been the type who could "improvise" so having the recipe is really important to her. The tricky part is in the proportion of cheese to semolina -- too much and it falls apart when you boil it in the soup. It also has to be "stiff" enough to grate. We don't know what it's called -- no other families we know make it. Thanks for your help!

- well i think you are telling me the she make was il pastiere!!!she`s using spaghetti mix with eggs parmesan cheese parsley.just cook the quantity of pasta al dente then make cooler ,get 4 eggs mix with parmesan cheese and mozzarella,mix all the pasta and put in the oven for 25 minutes then take out cut like a cake and serve in the plate.buon appetito!! she`s from avellino or some else place????????ciao
- Get the book "Lidia's Italian Table" form the library or bookstore. I'm almost positive that recipe is in there, because I saw her do it on her cooking show once. I can't for the life of me remember the name of that pasta.
