Does parmesan cheese melt?

Because I want to make fettucine alfredo and I always get peicey parmesan cheese and i hate it.

  5. Yes. Try adding cream and the cheese. Then mix until it is velvety smooth. That might help a little. You can also find a good recipe on this website.

  9. It melts, but in Fettuccine Alfredo, it's usually added after cooking, so it would not be melted in that case.

  14. You need a good recipe, and good parmesan. The stuff labelled "Parmigiano-Reggiano" will melt -- quite nicely. I melt it on a few things, often with other cheeses, and it melts as well as any of the rest of them. The 'Kraft' (and similar) parmesan is not what you want to use for fettucine alfredo. It just doesn't have the right texture, never mind flavour. The cheaper pre-grated ones have filler in them, too, which definitely won't melt. The Parmigiano-Reggiano is worth the price. It's fairly easy to grate, too, and doesn't even need to be very finely grated.
