Will a food processor grate potatoes fine enough for making potato pancakes?
I'm not talking julienne style, but the finer grate such as when the potato is finely grated by hand on the old style metal grater. Or maybe a blender is more suitable to do this. Thanks for your help.

- It should do fine, but experiment with both to see which you like better.
- I make something similar with plain left over mashed potatoes by just adding flour to them. We call then potato patties and serve them as a side dish Maybe you could use a pancake recipe and add mashed potatoes to it? Just a suggestion.
- Yes. There is a setting. But do watch it when processing for desired fine - ness.
- Use your shredding blade it's the closest I've found to the old box grater. The blender will make a mess. P.S. Nothing does it like the box grater.

- I imagine it should. However, last time I made potato cakes I bought the shredded potatoes that they have on the dairy aisle at the grocery store. The worked great and saved a lot of time and mess. You may need to gently squeeze some water out of them before frying.
