Can anyone share any tips for using a kitchen mandolin?

I got one from Pampered Chef last year, and have only used the cheese grater part. What else should I be using it for? I'm sure it's really handy... I just need to get into the habit of using it more. What do you use yours for? How do you shred lettuce or cabbage? I have a flat blade, a ripple blade, a cheese shredder blade... and one other one that I can't remember. Which blade, how do you do it? Thanks~

  1. Thinly slice fruits or vegetables like carrots, potatoes, apples, etc. Shred lettuce or cabbage. About anything you would try to slice very evenly and very thinly with a sharp knife except very soft items like very ripe tomatoes. Bert
  2. Shred your carrots, cabbages, onions, etc with the thing. Most of the good German cooks have one for shredding the mountain of cabbage for saur kraut they make every year. I love it for making cole slaw!! it shreds the cabbages and carrots perfectly.
  3. Don't cut yourself, always use the guard.
